The popular eatery Hawaii Poke & Ramen is getting set to open in Lubbock, near Texas Tech University at 2407 9th Street. However, unfortunately, their opening has been delayed due to the COVID-19 pandemic, according to Lubbock in the Loop.

They were originally planning to open in May. Their signage is up, but a peek through the windows doesn't give us any answers.

Hawaii Poke & Ramen, also known as Hawaii Poke, has several locations in Texas. You can find them in Victoria, there are two locations in Corpus Christi, and also in San Marcos.

Their website describes their menu and proud mission. Be prepared for VIP service at their quick and fresh Hawaii Poke bar.

They pride themselves on their traditional Hawaiian food, made to order; customers get to build their own bowl.

There is a huge selection of everything. Build your bowl from the base with brown or white rice, spinach, spring mix, chips and more, Choose some exciting goodies to mix in -- everything from seaweed to jalapenos, Then, select proteins, from raw to cooked, fish, chicken, beef and even eel.

But t hat's not all. There's an amazing selection of sauces and dressings. And still, there are more great add-ons, everything from crispy onions, to edamame, to mango. It's a big list.

They also have a build-your-own sushi burrito, and some very special dessert: rolling ice cream.
