I was minding my own business this afternoon when out of the corner of my eye I glimpsed the most intriguing billboard I've seen since God was talking through exterior signage.

The large advertisement read, "breakfast tacos." They had me at 'breakfast tacos,' but the egg as the "o" distracted me, so I had to flip around to see who was making these breakfast tacos. To my surprise, it's Bigham's Smokehouse.

This isn't Bigham's expanding their menu at their locations on 19th Street and 82nd Street, either. They're expanding their footprint into Lubbock by opening a third store to feature the breakfast taco near 50th and Milwaukee in what was originally a Steak N' Shake. It's 5012 Milwaukee Ave. if you need to plug it into your GPS.

According to a wonderful pit member at the 82nd Street location, the third Bigham's Smokehouse will be opening on March 23rd. She said that date had changed several times, but as of March 17th, that date is the target.

I do consider myself a breakfast taco aficionado and love eggs cooked in many ways and served in many vessels, but there's nothing that compares to a charred flour tortilla with a slice of perfectly smoked brisket adorned with either a fried egg or a soft scramble. I don't need cheese or anything else to get in the way. Maybe a dash of Cholula. That said, I can't wait to see what they dream up at Bigham's Smokehouse's third location.

I did ask the pit member if the Milwaukee location would be closed on Mondays like the other two, but she could neither confirm nor deny the availability of brisket breakfasts on Monday mornings. If the new Bigham's is open on the first day of the week, Mondays just got a whole lot better.
