If you’ve ever balanced a tray piled high with fried fish, mac and cheese, and a slice (or two) of Millionaire Pie, this one’s for you. One of West Texas’ most beloved dining traditions is making a special comeback, and it’s happening right here in Lubbock.

On Sunday, January 11th, The Escondido Grill at Spirit Ranch will once again turn back the clock with a tribute to the legendary Furr’s Cafeteria. After a wildly successful first event, this encore promises the same nostalgic flavors--with a smoother, more organized experience for guests.

A West Texas Staple Lives On

Furr’s Cafeteria wasn’t just a restaurant. In Lubbock and across West Texas, it was a rite of passage. Families gathered there after church, students filled trays on a budget, and generations learned exactly how much food could fit on one cafeteria tray.

From fried and baked fish to okra, collard greens, and that unforgettable Millionaire Pie, Furr’s helped define comfort food in our part of Texas. Though the final locations closed in 2021, the memories--and the recipes--clearly haven’t faded.

A Family Legacy Comes Full Circle

This tribute is especially meaningful for Escondido Grill Executive Chef and owner Jason Waters. His family history is deeply intertwined with Furr’s Cafeteria itself. Waters’ great uncle, Cliff Andrews, helped develop many of the signature recipes and played a major role in expanding the brand from a single cafeteria in Hobbs, New Mexico, to more than 80 locations across the Southwest.

Other family members—including Waters’ grandfather, Harold Andrews—worked behind the scenes as butchers, managers, and training directors. For Waters, this event isn’t just about recreating a menu; it’s about honoring a family legacy that helped feed West Texas for decades.

As Waters put it, this is about reconnecting with the flavors that shaped so many childhoods--and celebrating the memories that came with them.

Spirit Ranch Becomes Furr’s (For a Day)

From noon to 4 p.m., Escondido Grill will fully transform into a Furr’s Cafeteria experience. Expect original recipes, live piano music, and the unmistakable feeling that you’ve stepped into a piece of Lubbock history--set against the scenic backdrop of Spirit Ranch.

Reservations are required, with tickets available for specific time slots. Guests ages 12 and up will need a ticket, while children under 12 can order from a special kids’ menu. If the first event is any indication, tickets won’t last long.

What Was on Your Furr’s Tray?

For me, it was fried and baked fish, mac and cheese, okra, collard greens, and definitely Millionaire Pie--sometimes more than one slice. What about you, Lubbock?

Dust off those memories, grab your tickets early, and come hungry. For one Sunday, a true West Texas classic is back on the menu.
