If you're from Texas then you know that homestyle cooking cannot be beat and one small restaurant in the middle of no where is doing just that. R Country Store Restaurant is a small restaurant located just north of Lubbock, down the road from Hamilton Farms and At'l Do Farms, but is unlike anything else in the area.

R Country Store Restaurant standouts as one of the only places that northern rural residents can get a meal but not just any meal a wholesome country style meal. In January owner, Nichole Carver, decided to stop being an insurance adjuster and instead chose to follow her heart and do something that she loves. Serve her new community.

Carver isn't just the owner but she also works in the kitchen and serves up warm meals, along with smiles, as she works with her parents. I obviously had to try the food and I will be honest, it tasted just like a Sunday meal right after church. The food was made to order and a lot of their ingredients are sourced locally right from Lubbock and the surrounding areas. Companies like Hamilton Farms, Plains Meat, All Hale Meats, and MoMo & Pops Kettle Corn are just a few local businesses that Carver supports in her restaurant the same way the community supports her.

This small restaurant in the middle of nowhere has brought many rural community members together and allows them a place to come together and increase that at home vibe already present. Carver does have plans to expand her business and stay in the middle of nowhere which attracts farmers in the area all the way to South Lubbock residents.
