On the Thursday edition of The Chad Hasty Show, Texas Monthly's Barbecue Editor Daniel Vaughn talked with Chad Hasty about barbecue in Texas and what he looks for in great barbecue.

As the only barbecue editor in the U.S, Vaughn travels all over the state of Texas trying out various barbecue places, from the big cities like Austin and Dallas/Fort Worth, to the smaller towns like Abilene and Sweetwater. He explained that he checks out the flavor and the smokiness of the restaurant's meats, like sausage, ribs, and most importantly, their brisket. He added that he hears a lot of places complain that they don't have a good barbecue culture, but explained that all it takes it that one exceptional place to come to town and cause everyone else to step up their game.

As for what makes good barbecue, Vaughn said it's not necessarily about the ingredients or the recipes, it's the time and the effort spent on the meat. He added that it's easy to tell who's really been putting work into their barbecue as opposed to those who just tend to "set it and forget it."
