For a lot of us in West Texas, elote is nothing new. It's been around for a while. It's the simple concept of corn on the cob, exotic-style.

Now, I don't know about you, but I will go for the mayo, lime, parm, chili variety myself. But getting the right balance is the key to this being perfect.

There are so many choices on where to go for elote in Lubbock. SO MANY! I've had some good, some bad, and some I'm left unsure what it was I ate.
