Raise your glass, because one of the most important inventions in cocktail history was born right here in Texas—and yes, it involved tequila, tacos, and a whole lot of genius!

Back in 1971, Dallas restaurateur Mariano Martinez was running his brand-new Mexican restaurant, Mariano’s Mexican Cuisine, when he ran into a problem: margaritas. More specifically, inconsistent margaritas.

His bartenders couldn’t keep up with the growing crowds, and no two drinks were ever the same. That’s when inspiration struck—in the most Texas way possible. While grabbing coffee at a 7-Eleven, Mariano noticed a Slurpee machine. That’s right, a Slurpee machine sparked an idea that would go on to change the way the world drinks margaritas.

He went back to the restaurant, tweaked an old soft-serve ice cream machine, and on May 11, 1971, the first frozen margarita machine churned out a perfectly blended, icy lime masterpiece. The crowd went wild, and bartenders could finally keep up with demand—without developing biceps the size of briskets.

The invention didn’t just make things easier; it made frozen margaritas iconic. The drink spread like wildfire, becoming a staple in Tex-Mex joints from Lubbock to London.

Martinez’s original machine ran for more than a decade before it was officially retired and sent off to a place of honor—the Smithsonian’s National Museum of American History—in 2005, where it still lives today as a tribute to Texas innovation (and day drinking).

Want to taste a little bit of history? You still can. Mariano’s Hacienda in Dallas is still slinging frozen margaritas inspired by that first-ever batch. And yes, they’re just as good as they were in the '70s.

So next time you’re kickin’ back with a salted rim and a lime wedge, give a toast to Texas ingenuity, Mariano Martinez, and the state that proved the best ideas come out of the Lone Star state!

If you could bring back one restaurant or biz that closed in Lubbock, what would it be?
